Ingredients:
- chicken 1.5 kg
- thyme 1 sprig
- grated lemon peel 3 tbsp.
- bread crumbs 200g
- 150 g mustard
- olive oil 2 tbsp
- butter 40 g
- garlic 4 cloves
- salt, pepper
- Step 1
Prepare the crumble for the chicken. Place the garlic cloves, thyme leaves, 1.5 tsp salt and 1 tsp ground pepper in the bowl of a blender and grind.

Add the breadcrumbs, lemon zest, olive oil and melted butter to the resulting mixture. Stir until the breadcrumbs are slightly moist.
- Step 3.
Place breadcrumbs mixture in a large bowl.
In a shallow bowl, whisk together the mustard with a whisk. A little salt and pepper may be used.
- Step 4.
Cut the chicken with a large knife into portioned pieces. Wipe each one dry with paper towels.
Salt and pepper to taste.
- Step 5.
Dip the pieces of chicken one by one in the mustard mixture, then roll in the breadcrumbs, pressing lightly to make sure the crumbs adhere well.
- Step 6
Line a baking tray with baking paper and place the chicken pieces on it.
Bake for 40 minutes at 175°. Then increase the oven temperature to 200° and cook for another 10 minutes.
