Cheesecakes with lemon curd and raisins

Ingredients:

- 100g butter

- 2.5% milk 250 ml

- 130 g sugar

- 3 eggs

-flour 500 gr

- dry yeast 1 tsp.

- powdered sugar

- salt

Filling:

- 600 gr fat cottage cheese

- 150 g sugar

- 2 eggs

- 25% sour cream 2 tbsp.

- dark raisins 1/2 tbsp

- grated zest of 1 lemon

- Step 1.

Prepare the dough. Cut the butter into small pieces and melt.

Heat the milk and dissolve the sugar and salt in it, add 2 eggs to the milk and mix well.

Mix the flour with the yeast. Sprinkle half of the flour into the milk mixture and stir.

Gradually add flour until you have a soft, elastic dough.

- Step 3.

Add the melted butter and knead the dough with your hands for about 5 minutes, then roll into a ball.

Place in a bowl, cover with a towel and leave to rise in a warm place for 1-1.5 hours.

Prepare the filling. Rub the cottage cheese through a sieve, then beat with a mixer with the sugar and eggs.

If the filling is too thick, add a little sour cream.

- Step 5.

Add the lemon zest and raisins to the filling and mix.

Place in the refrigerator until ready to use.

- Step 6

When the dough has doubled in volume, divide it into 12 equal pieces and roll into balls.

Line a baking tray with baking paper. Place the balls on the baking tray with little space between them.

Cover with a towel and leave for 15 minutes.

- Step 7.

With the bottom of a small shot glass, make indentations in the center of each ball and fill them with the filling.

Whisk the remaining egg with 2 tbsp of water and brush the dough with it.

- Step 8.

Preheat the oven to 170° and bake the waffles for 25-30 minutes.

Cool the finished cakes and sprinkle with powdered sugar.
